I'n not sure, never used it but looking it up on wikipedia it seems to have a vegetable origin so I guess those that are very sensative may not cope. I use beef gelatin made by Dr Oetker, its really easy to use as it comes in a powder. their website is www.oetker.ie

It should be safe. Its made of a polysaccharide which is a long chain of Galactose molecules. Galactose itself is a type of mirror image of Glucose. So in effect its a form of Glucose although I am not sure if its digestable? Glucose and Galactose combined together make Lactose milk sugar, so if you are Lactose intolerant you might have a problem with it in large doses. The two sources of agar are seaweed and a form of red algae. MacD's use it in thickening their milk shakes! Its also used industrially in thickening paints and fillers etc.. ie MacD's milk shakes.

I posted a chicken croquette recipe on the recipes site which is really easy to make without jelling agent. There are a few ingredients you need to leave out but they were delicious.

We have on the site a person with the Ultra sensitive form of HFI for whom a 1/2 olive will require a long stay in hospital. She loves Kelp which is a sea weed similar to the varieties used to produce Agar So I think we can assume Kelp has no detectable Fructose in it and Agar therefore, in the quantities you will be using should be safe. A whole lot safer than Glucose anyway.

I am super sensitive right now and the only veg I can eat is Kelp. So I am agree with Ukbill. Besides, the research I found says that Kelp has no fructose.

Sorry Agar-Agar syrup is made from a cactus juice and is a definite NO NO!
Its almost all Fructose
Agar thickener is safe so far as I know I've never had a reaction to it.
