everything my doctor gave to read said no coconut or coconut milk but doesnt say anything about the oil. i am talking virign unrefined coconut oil that still smells like coconut. i cant find anywhere that anything says about coconut oil.

I will have to try to get some it should be fine although some oils like Soya Oil can cause us problems. Some Coconut milk I have found claims to be free of Fructose.. I used to get reactions to fresh coconut but I do not get a reaction to this tinned stuff.

coconut milk from the store makes me sick. it has added sugar but they call it evaporated cane juice. i like coconut oil, i even use it as a moisturizer. i heard that eating a spoonful before bed helps combat hypoglycemia.

I seem to have opened up a can of worms with the coconut milk. I don't know anything about coconut oil--I'm not even sure what it is, because I thought the fat that comes from coconut is a solid at room temperature. If it is the same thing, I recently saw a newspaper article saying it is coming into fashion for cooking, because the earlier studies that said it raised cholesterol were based on the hydrogenated stuff.
The coconut milk that I use in my recipe is Thai Kitchen coconut milk. It is labeled as unsweetened, premium, first pressing, gluten free and vegan. The ingredients are coconut milk, water, and guar gum. As I posted before, it shows 1g sugar in a 79l (1/3 cup) serving. I don't know how much of that is fructose--I am going to contact the company and find out. I haven't had a problem with it, but I do have more tolerance than some other people.
I have also purchased unsweetened, flaked coconut in the past, to make my own unsweetened trail mix, but it slightly upset my stomach. I don't know whether that was due to fructose in it or something else.

that makes sense. i wonder then if there would be fructose in the oil? probably not.
