Does anyone else make "cookies" out of pie crust dough? I love them, especially with unsweetened whipped cream on top! My family thinks I am weird (I'm the only one with HFI) but they know I like them, so for holidays when I was a little girl my grandmother would make them for me, and now my sister does. Of course you have to use a recipe with no sugar.
I also bought something absolutely wonderful at a bake sale once--they were the shape of a small cookie but they were not sweet, kind of a cross between pie crust and cheese straws. They tasted like they were made with butter as the fat and they had just a little bit of cayenne. They had pecans on top, which some of you might not eat. Unfortunately I was not able to get the recipe, but I have been trying to find something similar ever since. Does anyone know where I might be able to find this recipe?

My mom usually makes rugalogs/pinwheels for me and my brother whenever she makes pies. She rolls out the leftover pastry, puts on a thin coat of butter and sprinkles with cinnamon. She then rolls up the dough into a log-shape and bakes it. Sometimes she leaves them in log shape, other times she cuts them into little wheels. Either way they are DELICIOUS.
I've had something like what you're describing. I think they were cheese straws, though. They were definitely pastry-like and made with a lot of flour and cheese. Mine had jalepenos in it. YUMMY. I found them at TJ Maxx. I thought there was someone here that made them and sold them on her website. I don't remember the name or link, though.

Yes! Betsy and her sister Jane both have HFI. I met Jane a few years back - lovely person! I believe Betsy's business spun out of an old favorite (HFI safe) homemade treat.

Kim55, could you please post your recipe for your pie crust? I love your idea of serving them with unsweetened whipped cream, for Thanksgiving this week! I thought I might put a sprinkle or two of cinnamon and pepper in the crust for some extra flavor!

I made the pie crust cookies for Thanksgiving! I just made an unsweetened pie crust (1 c flour, 1/2 c butter, a little salt, and enough water to form a ball), rolled it out, and cut into circles with a small glass, and baked on a 400F baking sheet for 10-20 minutes. Such a great snack!
ETA: I just wanted to add that these have become such a hit that my friends are actually requesting I make these for dinner parties!! Thank you so much for this idea!

Try coating them with a little Australian Vegemite or Marmite (yeast extract) before baking or adding a little strong mature cheese to the pastry before baking..Yum making me feel hungry!
