I can't believe I didn't think of this before. I have always struggled to find sandwich fillings for Megs but found one she loves. I have struggled to find a way of binding the eggs as Mayonnaise always seems to have things she can't have. I suddenly happened upon creme fraiche. I just added a spoonful to a hard boiled egg, a pinch of salt and a mash with the fork and hey presto, egg sandwich that was consumed with great speed. that sorts one packed lunch to keep her going.
