I bought some Spanish dry white wine (less than 1% sugar-Albarino) and cooked with it in my risotto. I was wondering does it convert to fructose as you cook it?
I know some things convert like corn starch once you cook them.

i don't know about it converting but as it's made from fruit i couldn't have it at all!
Were you ok after eating the risotto?

I did have quite a bit of gastric bloating and upset after. All I had added was chicken stock (there weren't any additives), the wine, salt, pepper, mushrooms, and a tiny sprinkle of parmesean cheese. I drank the wine without cooking it before and actually didn't have any problems with it.
