Have you tried any other flours other than regular white flour? My son tolerates white rice flour as well as oat if he doesn't eat too much of it. He seems to react to white flour, so I'm looking for other types of flour that I can bake with. Any luck with sorghum, tapioca, or millet?

Most of the all-purpose flours have barley malt or barley malt flour.
We use Arrowhead Mills Organic Unbleached White Flour and we also generally avoid barley malt flour or barley malt in commercially prepared products. It has made a huge difference for us.
We also do okay with white rice flour, but I don't think we would try much else - we had trouble with a puffed millet cereal and we can't really eat much oat.

We use potato starch, tapioca starch, and white rice flour. Sorghum is a definite no. Millet is questionable for us. If I'm using 2 cups of flour, Graham can tolerate about 1/2 cup of millet flour. I sometimes add in almond meal for some flavor, fat, and protein.

Is there a difference between potato/tapioca starch and potato/tapioca flour? I think I recall seeing a package of potato starch and a package of potato starch flour.

Hmm.... there is potato flour and potato starch. I use the starch as it is lighter than the flour.

I use rice flour, potato starch (not potato flour), corn starch, almond meal, and a titch of glutinous rice flour (also called sticky rice or sweet rice).
Potato flour is the entire potato made into flour and is VERY heavy. One Gluten Free cookbook said that the potato flour includes the peel, where as the potato starch does not. In some of my mixes I'll also add 1 Tbsp. of amaranth flour.
