I was stumbling along the web and came upon this smallnotebook.org/2009/07/10/homemade-chocolate-syrup/I'm not a big fan of chocolate, but I know some HFIers on here that are. It might be worth the experiment to see if this would work with a substitution of Dextrose for the sugar and maple extract for the vanilla.

That looks like a good way to make it, well spotted. Starting to experiment a bit with sweet things so may be worth trying. Is vanilla not OK. I buy a vanilla pod and put it in liquid as it is heating and it gives a lovely vanilla taste. I made a wierd looking jelly with it which megs loved I heated a pint of milk with the vanilla pod in it ( you then wash the pod and can re-use it a number of times)and added a few tablespoons of glucose powder and some gelatine leaves. It set really well and apart from looking odd it was tasty. You could make it richer with cream

I know vanilla flavoring is not okay. I'm not so sure about vanilla beans straight from the tree.

I have found sugar free vanilla extract and we use it a LOT. There are a lot of vanillas out there that include a sugar in the ingredients, so I would just be careful to look at the label.
