Megs is really happy, we tried making doughnuts yesterday and they were a huge success. Texture needs a bit of tweaking but they were edible.
I've been limiting glucose so cakes are very limited but as she has her hospital tests starting on Wed thought I would see what happened with a bit more glucose before we go so I can ask them about it, so far so good. I didn't add as much glucose as recipe said and didn't think they were too bad and she wolfed about 4 down, never seen a new thing go so fast!!
We have a bread maker so that helped but you could do them by hand. I used the deep fat fryer but have seen special doughnut machines which are probably slightly healthier if you need to limit fat.
The recipe does make loads so you may need to halve it as they don't keep that well.
140ml milk
1 egg
450g white bread flour
50g sugar ( obviously use glucose)
1 tsp salt
50g butter
1 1/2tsp yeast (dried)
oil for deep fry
sugar for sprinkling
Put ingredients into bread maker in order you would usually for bread and put on dough setting. Or make by hand as per usual bread recipe to single risen dough stage.
Due to limits of fillings with HFI best to make ring ones so roll out dough to 2cm, 1/2inch thickness. Cut into circles 7.5cm/3inch . Then make inner circle with 4cm/1 1/2 inch cutter to make a ring shape.
Or roll into small dough balls.
Place on baking sheet, cover with oiled clear film and leave in warm place for about 30mins to double in size.
Heat oil for deep fryer to 180 Degrees, Add doughnuts 3 or 4 at a time. Cook for about 4 to 5 mins or until golden, I turned them several times. Remove using slotted spoon and drain on kitchen paper.
Toss in sugar and leave to cool. You could add some cinamon to sugar.
The round ones I cut in half and added whipped cream to them.
I must say they were very yummy. Took a while to get the cooking time right, the first few were a bit doughy but soon got the hang of it.
