I have started making my own pesto sauce because I can't seem to find one that doesn't have garlic in it.
Here's the pesto: 1 c. firmly packed fresh basil 1/2 c. firmly packed fresh baby spinach 1/4 c. olive oil 1/4 tsp. salt
In food processor, combine basil, spinach and salt. When it gets pasty, add the oil with the processor running. Process until it is the consistency of softened butter.

For pasta sauce: 3 TBSP butter 3 TBSP flour 1 1/3 c. milk 1/3 c. pesto 1/4 tsp. pepper
Melt butter in saucepan. When melted, stir in flour and pepper and then pour in milk all at once. Cook and stir over medium heat until thick and bubbly. Stir in pesto.
I use this as pasta sauce or use it in lasagna in place of tomato-based sauce.
I'll be using this to make baked ziti this week. Yummy!!!
