Sorry I am so late with this information, it has been a winter of nonstop illness. I have not even finished reading what everyone else has written all over this board.
Anyway, at Disney World in Florida, the person I have dealt with for all our fructose issues is a woman names Theresa Joiner.

The head guy is Joel Schaefer and I found him first in the magazine 'allergic living' where they had an article on the efforts of Disney to help their allergic customers. Joel will only refer you to Theresa but here is his email anyway:

I sent a letter to Joel because no one on the Disney phone lines would help me out or give me info about how to contact him.
Theresa sent me forms and all the loctations throughout the parks of low sugar and sugar free foods. Now as we all know, low sugar and sugar free is not always good for us trying to feed kids, there are still many ingredients we need to watch for. It was a great start though. They had never heard of this problem and were concerned they may not be able to help us. We had no problems at Disney as we spoke to a chef everytime we ate.
Oddly enough Epcot was the hardest place to eat as all their grown on site foods seemed to contain corn syrup. We had Ed at the Whispering Canyon who along with Jamar at Shutters were the most knowledgeable about their foods.
Wolfgang Pucks was terrible to eat at and their staff had no idea about food, even the Chef. After explaining our problem, he brought them a sugar free cheesecake covered in raspberry sauce with fruit all over the plate. DOH!!
We also had problems at Chef Mickeys as our Chef was unwilling to make any foods for us. we were given a sugar free dessert that was like cardboard and had probably been frozen for months. The rest of our places we (and I really mean I) phoned ahead and spoke loudly and requested odd things like cucumbers and green pepers and raw vegetables but not carrots at all meals. We even got an oil and vinegar dressing that the chef had fun making at our table for the kids.
All in all, our travel locations are limited so Disney is a great choice.
