I found the names of the main people in the dietary department at Disneyworld and sent them a letter before we went. I will look them up and how to contact them for everyone who wants to go. They gave me specific places where to get fructose free foods ie snack carts, and which restaurants to stay away from (Chef Mickey's). They also told me which restaurants have sugar free (but not necessarily fructose free ie honey or corn syrup). I will get back with the info - Nadine

Chef Mickey's is actually one of the restaurants that had one of the more knowledgeable chef's. When I said we couldn't have fructose, he responded with "then I would stay away from the bacon as I'm not sure what it was cured with". He made her fresh cracked eggs, (they use a mix on the buffet) as I wanted them, and cooked her special potatoes without onion, etc, in them.
You can actually eat in ANY restaurant as long as you tell them you need a special diet when you make the reservations. The people at the counter foods were just as helpful, just not as easily able to stray from the normal menu.
We even ate at O'Hanna's. It is a Polynesian family style place. They only have one menu. It all comes out to the table in big, sharable bowls. It all has sauces, etc. Of course nothing she could have. Again, the chef came out and talked to me, then made her a special plate of plain chicken and rice. Maybe not exciting, but certainly what she likes and can eat.
When I talked to the dining people before we went, they assured me that it would work this way. I went with my doubts. I was pleasantly surprised.
At the Tusker House, which is a buffet only, the chef -again- came out. He made her plain beef, and even made her plain MASHED potatoes, which is NOT something that was on the buffet.

Chef Mickey's was a dinner experience for us, breakfast is always the easiest as we travel with our own syrup. The night we were at Chef Mickey's everything was covered in a sauce, honey, or had MSG on it. They were unwilling to make us anything special as it was going to be a long wait because it was so busy. They had sugar free brownies but they were awful, you could taste the sugar substitute and had been frozen for a long time. I have learned that at Disney, phoning ahead and speaking to the chef is the best way to go. You get perfect meals each time. Jamar, the chef at Shutters and Eddie at Whispering Canyon were the best we found in all of Diseny.
