We just came back from spending a week in Disney World. I am absolutely thrilled. I have NEVER been able to feed Regina so easily.
When I made the reservations, I told them I needed a special diet. They put it right on my reservation. When we walked up to a table, I would remind them, if they didn't beat me to it, that I needed to see the chef. The Chef of the restaurant would then come out to the table and we would discuss what I needed for her. He then made her a special plate of what we decided. It was either steak, chicken, pork or shrimp, with either some kind of potato or plain rice. One time, he even mashed potatoes just for her. It was soooooooooo nice.
The walk-up counters were also helpful, but not quite as easy. They were so busy that we usually just got her a burger and fries. The chicken nuggets were also safe.
The key word here was "allergy". I don't mind. I'll use whatever word works. Once I said allergy, they would do whatever they could.
Of course desserts were another matter. But that doesn't bother her. She's happy with a second glass of milk until we got back to the room and she had her own that I took along. That was just like home to her. It's what we do here anyway.
Some of the chefs knew what had fructose in, and some didn't. But they were ALL willing to do what I asked. It was such a nice trip!
So if anyone goes to Disney, just remember the key word - allergy. You'll get what you need.

Drat! I should have tried this. I was getting a little tired of chicken tenders and fried fish by the end of the trip.

Hello Tammy,
We had the same good Disney WOrld feeling too. We used the word "severe food allergy" as well and they bent over backwards.
They let us read through their receipe books with ingredient lists with the head chef holding the book and going through everything with us.
Our kids are small so we booked a character breakfast one morning. The head chef came out with his book and Lily feasted on scrambled eggs, special Mickey waffles that he prepared just for her and the sausage or bacon was safe. I can't remember which, but we had a great time seeing Lily enjoy herself at mealtime.
