Short-grain Arborio Rice is essential for the texture and taste of this recipe. Ordinary rice just won't work.
1/3 Cup Arborio (short grained Italian) Rice 2 Cups Milk 2 tbsp Dextrose (Optional) 3 tbsp Butter Grated rind of one lemon (Could be left out) 1 tsp Cinnamon
1) Preheat the oven to 250 F. 2) Mix the rice, milk, dextrose, butter and lemon rind together in a bowl and pour the mixture into a greased 2 qt. baking dish. 3) Bake for 2 hours 4) Sprinkle with cinnamon and serve hot or cold.

Fred Just a question Why the dextrose?? Rice pudding just is great without it trust me! Feeding a HFI person and trying to get food to taste similar to everyone else's is a waste of time, it wont be! Make the rice pudding as you describe but PLEASE miss out the dextrose, put the portion out for your HFI person (be they 3 months or 67 years old, or in my case a Large separate bowl full as I like it so much!) Then mix in normal sugar or dextrose or Honey if you prefer for the rest of the family. PS I have not tried lemon so it will be nice to try. I usually use Nutmeg and a good nob of unsalted butter! But it can also be made using real vanilla pods if your budget will stretch to them or Real Vanilla flavoring if not. Just split the vanilla pod length ways and put it in the milk and warm it through for several min before putting the milk (and the tiny black vanilla seeds onto the rice) the vanilla pods by the way can be used several times unless you really let them soak for a few hours.. now who would do that... If finished in the oven you get the lovely hard skin on the top which is really nice! I do not trust the fake vanilla essence flavor I suspect if is made on a sugar base of some kind, but I might very well be wrong about that. MMM? Cinnamon is a spice i have only recently started to use and then only sparingly. To me it tastes sweet and as a child / adult I could not take it at all, now I use it very sparingly in food I cook for myself but I have always used it in food for the rest of the family. Fred, What did I do wrong? I made the rice pudding recipe this morning, but it turned out like rice soup with a layer of melted butter on top. The rice we fished out was tasty, but the dish does not resemble rice pudding at all and definitely does not have a crunchy topping. Is it maybe 1 and 1/3 cup of the arborio rice vs. just 1/3 cup? Could it be that I used 1% lowfat milk? I love rice pudding and really want to make it right.

Would Risotto work? I have a big jar full of risotto that I don't know what to do with. I'm too lazy to cook with it.
