Southern Buttermilk Biscuits
2 cups All Purpose Flour 2 tsp Baking Powder 1/2 tsp Baking Soda 1/2 tsp Salt 1/4 Cup Shortening 1 cup Buttermilk
Sift together the flour, baking powder, baking soda and salt. Cut in the shortening, add the buttermilk and mix until the dough just cleans the bowl, Turn out on a floured board. Knead lightly, three or four times (don't overwork it). Roll out to about 1/2" to 3/4' thick and cut with a biscuit cutter.
Bake on a cookie sheet at 450 deg F. about 10 to 12 minutes or until lightly browned. Makes 12 to 14 biscuits.
Best served "hot" right out of the oven. Split in half and smear with butter. Yum! Yum! Y'all.
Alt 1: Add 1/2 cup of grated cheddar cheese to the dry ingredients for a yummy change.
Alt 2: You can also make the biscuits using regular milk instead of Buttermilk by reducing the quantity of milk to 3/4 cup. Increase the baking powder to 3 tsp and omit the Baking Soda.
