2 1/4 cups all-purpose flour 1 tsp baking soda 1 cup butter or margarine, softened 1 cup dextrose 1 package JELLO sugar free chocolate instant pudding mix 1 tsp vanilla 2 eggs
Mix flour with baking soda. Combine butter, dextrose, pudding mix and vanilla in large bowl, beat until smooth and creamy. Beat in eggs. Add flour and baking soda. Drop by rounded teaspoonsfuls onto ungreased baking sheets. Bake at 375 for 8 to 10 min.

Hi Carol, I also love this recipe and I add 2 ingred. to make it into a cake or cupcakes.

I just tried adding what I would add to a box cake, and it worked! It is a nice change from the white cake. I add aprox. 1 cup water or milk 1/4- 1/3 cup oil
the batter is a little thick with the jello pudding, but it cooks fine!
This is a great recipe! Not a chocolatey as duncan hines, but a good alternative to the yellow cake!
Please let us know if you come up with a good frosting recipe! Alice

Alice, That's a really good idea. I've never thought about trying to make it a cake. I think that may be Regina's next cake.
I now just use sugar free Cool Whip for frosting. You can whip it with cream cheese for a different frosting. It's a little heavier with the cheese, but then it's not always the same. Tammy

I have made these cookies with butterscotch pudding instead of chocolate and they are also really good that way.
Tammy, I am jealous! I have not been able to get the SF cool whip out here yet. Mixing it with cream cheese sounds like a great idea. Does it hold up for any time out of the refrigerator?
For any of you that have not made the white/yellow cake yet, Nate scales the refrigerator (we have a bottom freezer) to serve himself the "muffins". Now that they're gone, he periodically brings me the empty container and asks me to make more. I added cinnamon since he is pretty well a cinnamon fiend. Thanks for the recipe Kristen!

Hey guys - Any ideas as to how I can make this recipe without the SF chocolate pudding? Calvin has a pretty bad Yellow #5 allergy - full body hives and his mouth hurts and itches - and unfortunately all of the Jellos use Yellow #5! Calvin turns four in a couple of weeks and he has asked for a chocolate cake - I know he's not really going to eat it - He just THINKS he wants cake - but I'd still like to make one for him ; )
Any help would be greatly appreciated!

How about making a chocolate cake? hfiinfo.proboards.com/index.cgi?board=Recipe&action=display&thread=322You can leave the red food coloring out, just use water in it's place to keep the moisture. I make these into cupcakes also. Regina loves them. There is also a recipe to make your own pudding, but I don't know how it would work to add actual pudding instead of the mix in the cookies. Maybe if you left some of the liquid out? ?

Thanks, Tammy. I'm going to try that recipe this weekend to see how it comes out for us using butter. If it doesn't work out I might try the brownie recipe topped with SF Cool Whip or homemade whipped cream. He originally asked for a blueberry cake - poor guy!
