You peel the rhubarb like asparagus.
Then you cut it into little cubes and cook it into water until it is soft and almost disintegrates.
If the rhubarb is soft, you fetch it with a skimmer out of the water.
Give glucose over the rhubarb and serve it with custard.
I love this compote!
