1/2 cup shortening 1/8 tsp. salt 1 cup boiling water 1 cup flour 3 eggs unbeaten Add shortening to boiling water and stir over medium heat 'til mixture boils Lower heat, add flour all at once and stir vigorously until mixture leaves the side of the pan. Remove from heat and add one egg at a time, beating thoroughly after each addition Shape on a an un-greased cookie sheet using 1 tablespoon of mixture for one puff Bake in hot oven ( 400 degrees), pre-heated , 15-20 minutes Reduce heat to 350 degrees and bake 20 minutes longer Remove and cool When cold, take a very sharp knife and make a slit on one side and fill with sugar free instant vanilla pudding. Or in the summer, you can fill them with ice cream. I usually double the recipe when I make them

I just noticed that I have a little quatation on the side of this recipe. It says to make the over hotter. 450 degrees for the first 20 min, or it they won't "poof" up. And it may not take the whole 20 min at the lower heat. sorry I missed this when I posted it.
