1/2 C. shortening 2 eggs 2 oz. red food coloring 1 tsp. vanilla 2 1/2 c. flour 1 Tblsp vinegar 1 1/2 c. dextrose 2 Tblsp cocoa (Hersheys) 1 tsp. salt 1 c. buttermilk 1 1/2 tsp baking soda
Cream shortening and sugar, beat in eggs, add food color, salt and vanilla to buttermilk. Add Alternately with flour and cocoa and beat well. Stir in soda and vinegar. Bake in greased, floured pan at 350 for 40 - 45 min.
This works well in either 1 9 X 13 pan or 1 round pan to make a layer cake. Frost with sugar free instant pudding. Vanilla (if you want to decorate it) or Chocolate works equally well. Use small peices of pretzels (check ingried.) to form words to decorate.
NOTE: THIS WILL BE MORE MOIST IF YOU ADD AN EXTRA EGG AND ONLY USE 1 1/2 CUPS OF FLOUR. Bake for about 35 min. or until done.

I"ve only ever used the shortening. Butter would probably give it a good taste, but I would think that it would change the texture. Maybe it may be what helps keep it from falling??? Didn't really think about that before, and just guessing.
