Hello, all-
It seems the syrup we previously used for our son had added Stevia to the ingredient list. So, I’m on the hunt for a new option. I can’t seem to find a resource on Allulose. Is it an HFI safe substance?

why do you want a "syrup" of any kind for an HFI child?

My son is 19 and headed off to college. He has long enjoyed pancakes with a safe syrup and he’s old enough to calculate fructose consumption per day, etc. Thanks for any insight on if this is a safe alternative or not.

Allulose is an epimer of fructose, meaning its chemical formula is the same, but its atoms have been “arranged” differently. It’s not supposed to be metabolized by the liver, but not something I would test out on a HFIer. It also inhibits the absorption of glucose and glucose based carbohydrates, such as starch, and in that way could lead to hypoglycemia or stomach upset.

You could try making your own with glucose syrup and sugar free flavoring.
I make my daughter flavor infused butters. Simmer a whole vanilla bean, or a cinnamon stick, or both together, in butter or ghee until fragrant. As low heat as you can get to avoid burning the butter. Butter solids can turn bitter when heated for too long, so just pour off the butter fat and leave the solids in the pan. Sugar free, so delicious, and your house will smell amazing, too!
Important: Store it in your freezer as infused fats-oils and butters-can grow botulinum bacteria at room temp or even refrigerated temp.

Adding salt extends the storage time. but how much and by how long.. that is a judgment call but freezers can keep unsalted butter for years safely.
