Hi,
Can anyone tell me if the following are safe for a person with HFI
Organic stone ground unbleached flour, water, organic wheat sourdough starter, organic cracked wheat, sea salt.
I would love it if my son could tell me but he is not very verbal.
also, he like celery - any limits suggested for daily safe consumption of raw celery.
Also, red lentils - are they safe? how about brown lentils ?

Cracked wheat is basically whole wheat. Those with HFI cannot eat whole wheat. So I would avoid it. Go through the older posts under the safe foods heading; there are recommendations for breads and flours that are tolerated. As for the other foods, celery and lentils are not tolerated either. If your son has HFI, you should stick with white flour pasta, white rice, meats, chicken, fish, and dairy. Some can tolerate very small amounts of spinach or leaf lettuce, but I don't think they eat it every day. Some of us can eat mushrooms; others can't.

The reason Whole wheat is not considered safe is mostly because of the high digestible fibre level in the bread. (the flour also has a higher fructose level than plain white flour, but this is likely to be digested by the yeast. The same is true of lentils (regarding fibre) Celery is very sweet when cooked but tastes Ok when uncooked. I use celery seeds (only a little they are very powerful flavoured) in cooking instead of celery. A little celery will do no harm in an otherwise safe diet. Hope this helps?
