I made Cheese it chicken for my son for dinner the other night and it was a big hit!
I used chicken, pounded thin and dredged with flour and egg. Then instead of bread crumbs, I smashed up Cheese it crackers and added parm cheese and pepper as a bread crumb. I fried it in a little olive oil.

Frying with olive oil does not harm the liver, it is not a lot of fat for a child with IHF and fatty liver

All HFI people appear to have a fatty liver on Ultrasound. However this is usually due to the excessive amount of Glycogen we store in our livers. If a blood test comes back showing the liver is stressed (fatty) that is due to an excess of Fructose in the diet, unless newly diagnosed and only just on a zero Fructose diet. After about 6 to 9 months, depending on the level of liver damage done before diagnosis and how tightly the zero Fructose diet is followed, the liver results should return to normal levels (or close). Remember the total allowable daily amount of Fructose is 2g for an adult! Above that level damage can be done. 2g on say an 85Kg adult relates to about 0.024g per Kilo (2.2 Lbs) body weight. This is far too small an amount to measure. Hence the advise of zero Fructose

Absolutely true. Fatty liver is primarily caused by stored sugar. This is why alcoholics often develop fatty liver since their livers cannot metabolize the excess sugars from high amounts of alcohol.
One note regarding ultrasound - depending on the extent of damage and how young a child is when damage starts to occur, I would propose that it could take much longer than 6-9 months for the liver to heal.
My son was fed sucrose while in the NICU so liver damage began from birth and did not end until 18 months old when we discovered he was intolerant to fructose. He is now almost 7 years old and while his liver's echogenicity and fatty lesions have improved incrementally each year (his liver and spleen went from enlarged to normal size rather quickly), his liver has not healed completely after 5.5 years fructose-free. The healing has been very slow even though his labs are now normal (his liver was failing by all accounts 5 years ago pre-Dx).
So, please don't rely too heavily on ultrasounds to gauge improvement on the HFI diet and instead focus on relief of HFI symptoms that can be observed and whether your child's belly goes from bloated to flat.
