Here's what I am making for dinner tonight. It's one of my favorites: ONE PAN LEMON CHICKEN and RICE funwithoutfodmaps.com/low-fodmap-lemon-chicken-rice/• 2 Tbsp. garlic-infused olive oil • 1 (20 oz.) package boneless, skinless chicken thighs/breast quarters • 1 cup uncooked white rice • 2 cups chicken or bone broth • 1 lemon, juice of • 2 Tbsp. Italian seasoning [or other safe HFI fresh herbs] • Parsley or Cilantro (or Spinach) chopped for optional garnish INSTRUCTIONS: 1. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 2 minutes each side. Remove chicken from pan and set aside. 2. To now empty pan, add rice, chicken broth, lemon juice and Italian seasoning. Stir to mix. Place chicken on top of rice mixture. Cover and cook on medium heat for 20 minutes or until liquid is dissolved. Garnish with optional chopped greenery and serve.
