POTATO CHIP BAKED CHICKEN
This is so easy and historically one of my family’s all-time favorites. Use quantities and pieces that best suit your family.
Chicken pieces (I prefer chicken without skin, but OK with skin, too) Potato Chips (I like Lays Classic best), crushed Ground Pepper Garlic powder - only a little, if you can tolerate it (or onion powder, other spice, herb) Butter (or Earth Balance Margarine – Dairy Free), melted
INSTRUCTIONS [1] Set oven to 350 F [2] Crush potato chips; add seasonings, blending together. Place mixture in a shallow dish. [3] Melt butter (or Earth Balance). Place butter in a second shallow dish to roll each chicken piece in. Follow by rolling chicken in potato chips. Place covered chicken in shallow baking pan so sides do not touch. [4] Bake for about 1- 1 ¼ hour – or until chicken is done.. top coating should look slightly brown and crunchy. Yum!
