Do you include or omit the vanilla extract? We haven't experimented with that much yet.

I used only 1/4 tsp of vanilla. Antonia recommended Frontier's Organic Madagascar Vanilla Extract, and he has had no reactions. I am sure you could omit it entirely and it would still taste great.

We have a local delicacy called "Oatcakes" mostly made with oat flour. they batter is left to prove for 12 to 24 hours (it contains yeast). A friend of mine used to make and sell them I will try to get the recipe off him, this is normally a closely guarded secret handed down from generation to generation in families in Stoke on Trent. The Oatcakes are very like the Indian chapati and completely unlike any "cake" you have ever seen. Hot off a griddle though with crispy bacon and melted cheese.. food to stop your heart either in pleasure or cholesterol Wonderful things Oatcakes.
