not sure which of the following are safest type of potato...but these are the only types I can find in my area: Gold, Red, Yukon, Russet, Idaho can any be safely used for an HFIer ?

From what I recall, both reds and new (baby) potatoes are highest in fructose/sucrose.
Sadly the CSIDcares database does not break down the types of potatoes.
Nutritiondata.self.com has a little bit more information:
Red Potato (1 potato baked, large: 3-4.5" diameter) - Fructose: 1316 mg Sucrose 1346 mg
Russet Potato (baked, same stats as red) - Fructose: 957 mg Sucrose: 1166 mg
White Potato (baked, same stats as red) - Fructose: 1076 mg Sucrose: 1196 mg
Russet Potatoes are also known as Idaho Potatoes.

Floury white potatoes cooked in a lot of water after peeling and soaking in yet more water is the safest bet. however almost all potatoes are too sweet to eat regularly no matter how they are cooked.

Yes, stick with white or russet potatoes and make sure they are soaked in water to leach out much of the sugars. Stay away from any colored or small baby potatoes.

And any "new potatoes"! Only eat old potatoes. if they do not need peeling.. leave them alone

I have eaten a lot of potatoes over my 76 years and. have never had a problem but I only eat white ones. I have also eaten a huge number of bags of Potato Chips.,

YAY! Fred! How are you?? Glad to see you back on the forum! missed your balanced opinions. Seems there are 4 genes that can cause Fructosemia so there is a potential for 32+ different types of Fructosemia / HFI.. Still trying to get my head around the implications of that.. It also means there should be a lot more of us than anyone has thought before.. not to mention many differing variations in symptoms and side effects. This could explain an awful lot of the variances we see in diets. I for instance cannot tolerate nuts (brazils in particular or their oils.. others have no issues with them.. Trying to set up a Fructosemia support network to provide a single source of medically tried and tested advice. Got the top Uk specialist in Metabolic conditions on board he has been working at it for 35 years! Yes I have also eaten large numbers of bags of crisps (as they are known as in the UK) unfortunately I think they are changing the varieties of potato and finding many are too sweet for me to eat nowadays.
