I bought some fresh (sliced) white mushrooms last week to add in with chicken, Parmesan, and olive oil to a pasta that I make rather frequently. This was the first time in some months that I've added in mushrooms. I didn't check the label to see if there were ingredients aside from mushrooms. I had one bowl of pasta and thought it tasted very sweet. I had my husband try some and he remarked that the mushrooms did taste unusually sweet.
The mushrooms were grown in PA. I don't know if they were treated with a sugar preservative wash or if they're just engineering them to be more sweet. Have you guys had any reactions to fresh white mushrooms recently? Have you noticed them tasting sweet?
I have another crate in my fridge that I haven't cooked up yet (made by a different manufacturer--or at least a different label, but still based out of PA). I'll let you know if those taste sweet, too.

I learned from my days on the low fodmap diet that white mushrooms, I think these are also called button mushrooms, are naturally high in the polyol mannitol, which is HFI safe. So there might be some hope that the increased sweetness you’re tasting has to do with an increase in the amount of mannitol, not fructose or sucrose.

I hope so. I didn't notice any physical reaction, but I was not feeling great afterward. I'm guess it was a psychosomatic response to sweetness, but I would like to hear from others if they have any positive/negative experiences with white/button mushrooms.

Yes, I see they were pre-sliced. I would not be surprised if they were treated with some kind of preservative. Probably safer to buy whole, unwashed mushrooms and wash and slice yourself.

I thought that as well and dug out the packaging to see. Of course, no ingredients listed. I would not be surprised if they were without disclosing it, though.

I just ate a bowl of fresh pasta, organic shiitake mushrooms that I sliced sautéed in butter with a little salt and heavy whipping cream, and shredded Parmesan. Delicious and HFI safe, right? Why am I nauseous now?? Ugggh... frustrating! I hope it’s not the mushrooms.

Colormist- I was reading your initial post again- do you think it may have been the Parmesan? I also had a newer type of shredded Parmesan in my pasta today.

I eat Parmesan regularly and have not noticed a reaction. CSID database says Shiitake mushrooms are straight glucose (no other sugars). www.csidcares.org/food-vegetables/And their Parm cheese is all lactose: www.csidcares.org/food-milk/ (it won't let me link to the food directly, just type in Parm in the search) Very curious about your reaction now. Was it a new type or cream or pasta? I know people have found sugar in salt before, too.

Mushrooms make my mother sick sometimes, even though she loves them. She’s actually had to vomit after eating a lot of them. I think it’s the mannitol. She also says sorbitol makes her nauseous. Someone was giving her sugar free mints with sorbitol and she finally figured out everytime she ate them she got nauseous. She does not have HFI so this is a gut reaction, not metabolic. Sugar alcohols, anything ending in -ol, can make anybody feel unwell or cause IBS like symptoms-nausea, diarrhea, vomiting. Not all people, but it’s not necessary uncommon.
Anyway, shiitake mushrooms have even more mannitol than button mushrooms. If you didn’t feel hypo maybe it was just an gut reaction?
