Hi all,
This is my first post and I'd like to start by saying thank you to you all for dedicating so much time developing this invaluable source of information. I'm still waiting on my genetic test results but couldn't resist jumping in and posting an afternoon warm snack idea (it's just on the cusp of winter here in Australia). At the very least the recipe is a way of thanks for helping me on my journey. It's a great hypo saver ready in 3 minutes with ingredients in most people's kitchens!
Quick Eggy Bready
Ingredients: 1 egg 1 small pinch salt 1/4 teaspoon baking powder 1 tablespoon cream or sour cream 1 tablespoon olive/preferred oil 3 tablespoons plain white flour
Mix all ingredients in a bowl and transfer to a mug. Microwave for 90 seconds on high. Tap out onto a plate, slice and enjoy. Optional to add cheese, use slices to make toasties in a sandwich press, or fry them in butter if you're feeling extravagant! It's no artisan sourdough, but a great snack in a tight pinch that would be good for kids too.
