That's interesting about the oil! I like to cook with it but always make my HFIer son did separately with olive oil. Maybe I'll have him try coconut oil sometime.

If you try the oil I would make sure it is very refined. The less refined grades are often touted to be healthier because they contain more of the compounds from the meat of the coconut that are suppose to be good for you, but this could also include sugars as well.

Yes, coconut flour is no good -- unfortunately, speaking from experience. Coconut oil, if refined well is OK...but is not thought to be as good for you by folks who know as they were saying just a short time ago. Probably better to use something safer for us. I don't cook with it any more.
