There is a new chocolate company based out of Fullerton, California called ChocZero. Here is the ingredients list for their products: Unsweetened Chocolate, Cocoa Butter, Soluble Corn Fiber (this fiber consists of different chain lengths of glucose molecules), Sunflower Lecithin, Monk Fruit Extract ( A mogroside which is a glycoside of a cucurbitane molecule and is HFI safe) Madagascar Vanilla Beans.
This is the first sugar free chocolate product in the US market that does not contain Inulin ( a fiber that consists of different chain lengths of fructose units) or sugar alcohols (sugar alcohols give me terrible GI distress).
The only issue is the vanilla beans. I will find a vanilla scientist to enquire as to whether vanilla beans contain any fructose. I already consulted a chocolate scientist and confirmed that the fiber in unsweetened chocolate consists entirely of glucose units. So unsweetened chocolate is HFI safe.
The other issue is for those HFIers that have nut allergies. This product has tree nut contamination because they also process products that contain nuts.
On the positive side, these chocolates are delicious. Far better than the Lily’s chocolates that contain inulin.
ChocZero is primarily marketing to people on Ketogenic diets but so far they are the best product out there for people avoiding both fructose and sugar alcohols.
I just purchased equipment so I can make my own fructose free chocolates. However, I am extremely busy running clinical trials for Huntington’s disease. So it might take a while before I am able to get my chocolate making operation up to speed.

Would love a chocolate update! Just ordered choczero to try it. I’ve been eating Venchi chocolates but their Chocolight line has sugar alcohols (maltilol) so I only have one piece a day
