As Adam gets older and expands his meat choices, I am looking for the best ways to cook them. Mainly fish, probably tilapia or cod, and steak. What are your go to seasonings and/or cooking methods? Feel free to include other meats.

I don't eat fish, but with steak I generally only use salt & pepper. Occasionally I'll add some safe soy sauce.
I do make roast now and again with cream of mushroom soup and white potatoes.
I also use cut up beef to make beef & noodles (also with cream of mushroom soup as the broth).
Ground up meat is great for nachos, burritos, or tacos (I make my own taco seasoning).
I shred up cooked chicken breast mixed with sour cream, shredded cheese, taco seasoning and fold into a flour tortilla to make Cheesy Chicken Chimichangas (my husband calls them chicken pockets). These are also great leftover for "on-the-go" food.

Thanks colormist. I am also curious about your taco seasoning. Also, do you have a go to brand of taco tortilla and cream of mushroom?

I use campbells cream of mushroom (regular) and Chi-chis or Herdez Flour Tortillas (always check the ingredients!). There are other brands that might work, but they don't taste as yummy or have a poor consistency. This is my taco seasoning recipe: www.allrecipes.com/recipe/46653/taco-seasoning-i/Feel free to omit things like garlic, onion, and paprika. I typically half the spicy ingredients or use less seasoning when cooking with the seasoning as it is very spicy. The ingredients in the taco seasoning include: chili powder, garlic powder, onion powder, red pepper flakes, dried oregano, paprika, cumin, sea salt, and black pepper.

Ok I am a little mad when it comes to this. Dried herbs have never been a problem.. so go made with them! Parsley with fish always! Celery seeds, Cumin, Coriander fennel seeds etc etc are all safe in any amount you are likely to ever use. Basil leaves in home made pesto.. wonderful! Bay leaves in meat dishes. (only 1 or 2 otherwise it make the dish sharp / bitter in flavour and Never in a pressure cooker) Dried chillies and chilli powder, chilli oil is completely safe.. well from a sugar standpoint.. just do not put your finger near your eye with any on it! aslo wash your hands very well BEFORE going to the toilet if you have been handling chillies of any sort! Paprika is good in small amounts. Ginger is an iffy one however. Its a root so is the energy store for the plant and will contain quite a lot of Fructose. Garlic oil is safe, and you can make your own safe flavoured oils very easily lemon, lime or orange oil too! I have a very full store cupboard full of herbs and spices. they get a lot of use! It’s basically concentrated celery, analogous to what fruit juice concentrate is to fruit in my mind. The reason it’s used in bacon is because it’s a natural source of nitrate. I worry if it’s being used as the main form of preservation in a cured meat then the concentration is too high. I feel synthetic preservatives would be more safe. It always feels weird to prefer artificial over natural though.
If used as a flavor enhancer/spice probably okay occasionally? I don’t think nearly as much would be used.

We usually get Low Sodium bacon which as you know has nitrates. But, I started ordering from Buthcer Box (delicious filets and roasts!!) and ordered a pack of uncured bacon this time. The ingredients are pork, water, salt and celery powder. I figured I would let him try a bit. He seems fine afterward, but the bacon was wayyyy too salty for all of us so we will not get it again. It is indeed hard to get out of the mindset that natural is not good and artificial is more tolerable, Antonia :-)

I love the look I get from other parents when, for whatever reason, they realize I seek out artificial ingredients over natural ones sometimes. 🙃😉
