These were a very successful experiment today. Very scone like.
Savory oatmeal cookies 1 cup oats or oat flour 1 cup flour 1 cup Parmesan cheese 1/4 tsp baking soda 1/4 cup salt 1/4 tsp fresh cracked pepper 1/4 tsp dried rosemary 1/3 - 1/2 cup olive oil 1/4 - 1/3 cup water 1 egg
Mix. Make into cookie shape. Cook 350 for 17-20 minutes.

Hi Jenn123,
What kind of Oat flour do you use? I have been making muffins with regular flour ( without malted barley. Do you think it will change the "cookie" to use regular, or do you think oat works best?

I use Bob’s Red Mill Gluten Free Oats. I put them in Cuisinart to turn into flour.
You could always just use flour with no oats. That would be good too. It seems the cookie shape/term helps with my daughter’s emotions as many of her friends have a cookie in their lunches. I have heard conversations of kids saying she can’t have cookies, pizza, hot dogs, cupcakes, etc ..... and her response is always, “Yes i can. My mom makes mine” So hitting the major categories with a safe alternative has helped her feel that she fits in.
