I am presuming you left out the honey. Did it rise OK without the Honey? Instead of honey Dextrose can be used although you might need about 10% more dextrose than any "normal " sucrose sugar.

Surprisingly it did rise without the honey. My child does not like adding dextrose to items, so we always have a variety of rising. I think we let it rise a bit longer than the recipe said. She made more today - simple recipe, she makes it herself (10).

Excelent! All HFI children really need to learn how to cook. Its an essential life skill for us. Yes sugar only really adds a little guarantee of consistency with yeast cooking. You can safely use a "little" sugar as a yeast "starter" where you dissolve the dry yeast (or fresh) in a little tepid warm water (taken from the amount of water to be used in the recipe, with maybe 1 5g teaspoon full of Dextrose or sugar in the warm water, and leave in a warm place to wake up the yeast for about 20 min. After 20 min the yeast has effectively eaten all the sugar and is hungry for more sugars.. at this point you ad the yeast to the flour along with the extra water and mix. The hungry yeast then starts on the Long chain Glucose molecules in the flour and making the bread rise with the CO2 it exhales from the sugars its digesting. Keep your young Chef learning

My son doesn't like dextrose either, Jenn. All that time puking really turned him off to any sweet taste. Thanks for the new recipe!!

I made this the other day and my son actually liked it! I think it tasted pretty god too we used the 4 cups total flour too Antonia, and it worked out well. It made 2 nice loaves. not as big since it didn't rise all the way, but still worth it. we cut the loaves in half and froze the rest since Ryan gets bored after a couple days of something.
