Hi there, my mother in law came up with a very tasty spinach pesto. It's my son that has HFI. Do you all eat spinach freely or limit it? Here is the recipe (amounts are ballpark):
2c baby spinach (these don't have veins to cut out) 1/4c parmesan cheese 2tbsp olive oil 1/4 cup milk or cream (optional)
Blend in food processor and enjoy with safe bread or on pasta. Even for a non-HFIer like me this is flavorful!

I use spinach as a sandwich green quite regularly, but that's nowhere near a portion size. I usually make a basil pesto (when I have time and access to fresh basil) but I am intrigued by spinach pesto. I will have to try this out!

I'm with Colormist on this one. although I do pull off the stalks when I use Spinach.
Usually I "sweat" the spinach in a little butter in a frying pan before adding to omelettes.
I pour off the excess water that appears from it being slowly heated and wilted, Portion size needs to be kept smallish though because I have had bad guts and not felt "good" after over doing the spinach on occasion.
