The other day I was talking to my mom about HFI and she mentioned the special dessert she has always made for me. She called them Cinnamon Rollups, but I came across them in a coffee shop once and they're call Rugelach. Here's a not-HFI-safe Recipe: www.foodnetwork.com/recipes/ina-garten/rugelach-recipe-1944318Here's the ingredients modified for HFI: 8 ounces cream cheese, at room temperature 1/2-pound unsalted butter, at room temperature 1/4 cup granulated sugar plus 9 tablespoons1/4 teaspoon kosher salt 1 teaspoon pure vanilla extract (Use Mapeline extract or omit this entirely) 2 cups all-purpose flour 1/4 cup light brown sugar, packed1 1/2 teaspoons ground cinnamon 3/4 cup raisins1 cup walnuts, finely chopped (I actually include 1/8-1/4 cup of walnuts for texture sake) 1/2 cup apricot preserves, pureed in a food processor1 egg beaten with 1 tablespoon milk, for egg wash I've actually never had it with cream cheese before, but that sounds amazing! My mother's recipe is a fine layer of butter on the inside (instead of apricot preserve mixture) with a dusting of cinnamon and about 4-8 evenly-spaced walnut pieces. She makes this for us in place of cookies or pie.
