These make for a good high protein snack, even cold: tastykitchen.com/recipes/main-courses/chicken-parmesan-muffins/Modifications: Omit the onions and replace with chopped olives. Omit garlic, parsley and sun dried tomatoes. For the eggs, I used one whole egg and one egg white. I used a heaping 1/2 tsp kosher salt. Freshly ground white pepper to taste. Drizzle safe pesto sauce (instead of the tomato sauce) on top. Pretty yum!

Nothing wrong with Parsley Garlic oil is fine too.
