With all the white rice that is in a gluten free HFI diet, and with trying to keep to lower glycemic index foods, I found this interesting. Basmati rice has the lowest glycemic index of rice, and is considered a low (some other articles have it as medium)glycemic index food. Considerably lower than plain white rice. Rice has very little sugar as it is, and we are able to eat rice malt, I have also never gotten ill from rice and make it my carbohydrate of choice and have never had to worry about type. I would however say that when I was in Borneo doing some field research and had to go on a low protein low fat diet, with lots of rice I did not feel well. This was not fructose overload, but merely struggle on this type of high carb low protein diet, and suffered with low energy. |This may be unrelated and just to due with my personal AMY gene or due to the role of the Aldolase B enzymes role in catalysing glucose. (or a tropical disease).
My point is that the fructose content in rice is small and unlikely to cause sickness, the glycemic index is from glucose.

Thank you for posting. With your years of experience, your advice is very appreciated.
Rice is definitely a safer choice than many grains available. Dr Tolan and Dr Johnson have advised me to limit high glycemic carbs to 2/3 servings a day, limit salt intake and stay hydrated. My daughter is gluten free so rice is the go to grain. So as per their advice, I am trying to keep glycemic levels as low as possible, but yes, rice is definitely a staple at our house.

Some rice in the USA is "improved" to avoid illnesses with poor people who can afford nothing else. The vitamins and other "improvements" are generally stuck to the rice using sugar.. When I got stuck with an aircraft breakdown for 24 hours in Thailand I discovered even their bottle cows milk and plain boiled rice had added sugar to it!.. I survived on cheese and crackers for 24 hours.. given to me by the helpful air stewardesses before I left the plane (all the food on the plane was going to be scrapped anyway ) 1.5Kg of cheese and crackers.. no I did not eat it all but really did not want to see any cheese or crackers for a considerable time after!
