Would anyone have a good meatloaf recipe they could share? I'm on my second failed attempt at making HFI safe meatloaf.

This seems to be successful at our house. Hamburger, egg, crumbs from homemade bread, Parmesan, a little chopped spinach, pepper. I put in pan and pour a little milk on top, cover with tin foil and cook 350 for about 45 minutes. Truffle salt is loved at our house so sprinkle a little on and serve with white rice.

Thank you! Will give this a go. Good idea to pour the milk on top. I was putting milk in the mix and the resulting loaf was soggy and soft. Then I tried adding tapioca, even worse, soggy and slimy!
What kind of pepper do you use and how much?

Oh never mind. I read pepper as in the vegetable, and I thought, can that be ok? But I'm sure you meant as in the spice. Need more coffee I guess... 🙃

HFI MEATLOAF or MEATBALLS
1 to 2 lb Ground Meat – beef [or pork, chicken, turkey, or mix for different flavors] 1 -2 egg, beaten ½ - 2/3 cup oatmeal, or precooked rice, or quinoa, or bread crumbs ½ to ¾ cup liquid of choice [milk, broth, water] Seasonings of choice [Italian, Spicy Mexican, just salt + pepper, or use your imagination] Finely chopped vegetables – this depends on what you can tolerate. Here are some suggestions: • Spinach • Kale • Mustard Greens • Green onion tops • Zucchini, grated • Green beans • Cabbage • Celery • Bell Peppers • Parsley
INSTRUCTIONS: • Choose tolerated ingredients. • Chop or grate veggies. • Blend all ingredients together well.
To Bake as a Loaf in the Oven: Lightly pat meat mixture into a Loaf Pan 8x4x2 and bake at 350 F for 1 - 1¼ hrs. To Bake as a Loaf in a Crockpot: Pat meat mixture into a loaf inside crockpot. I like to make a lazy 0 shape as I think it cooks better. Sprinkle fresh parsley on top, if using, and extra seasoning. Cover. Cook on Low 4-6 hrs. [If you use 2 lbs of meat: make that Low for 8-10 hrs/High for 4-5 hrs] To Cook Meatballs in a Skillet: Roll meat mixture into palm sized mini balls and fry in butter or oil over medium heat about 10 minutes until done, turning to brown evenly. May need to do these in batches. Drain meatballs on paper towels. Keep warm till all cooked. Can use drippings in pan to make a gravy for noodles or over rice. Yum!
