Hi All! it seems we are on a sausage kick in my house. in previous posts I mentioned that my son was all about sausage and was eating it everyday. the ingredients seemed safe as it listed dextrose, but since his liver numbers came back high, we cut back on a lot of different foods, sausage included, until his next draw later this month.
I was internet surfing about homemade sausage since my son still asks for it
I found this recipe and wanted to put it out there for opinions. Im not all that sure about the spices, so if anyone can help me out!
INGREDEIENTS: 1 lb ground pork 2 tsp poultry seasoning 1/2 tsp salt 1/2 tsp pepper 1/4 tsp nutmeg 1/8 tsp allspice 1/2 tsp fennel seeds 1/8 tsp cayenne pepper
optional: 1/8 tsp crushed red pepper flakes
they freeze well so I am really hoping the ingredients are safe, or at least I can omit the unsafe ones without changing the flavor to much.

I'd suggest looking into the poultry seasoning (since it's a mix)and making sure there's nothing suspicious in it. Mixes, or blends, of spices I've found will frequently include "natural flavors" or sugars.
If you do find something listed in it that you're not sure about, you should be able to make your own blend of spices for the poultry seasoning, in large enough batches that you can then bottle it, and label it as your poultry seasoning.

Thanks Ann. I checked what I used as my poultry seasoning( its some kind of savory rub) and I couldn't believe what it had in there. Sugar, corn syrup, natural flavors so that's out for sure! I may just scrap the poultry seasoning all together and see how it goes

You should not be too surprised.. since previous "health scares" with salt content and monosodium glutamate these things have been removed or reduced in content and replaced by.. sugars! Other than that the fructose content of the dried herbs (dried onion is not safe )is so low as not to need considering in the quantities you are ever likely to use. Enjoy

Both look fine to me no problems there. As always the stuff you buy in the shops is made to be as cheap as it is posible to make. Even "premium " brands are the same only they put in even more sugar these days. Parsley added to food (fish and meat dishes) has been proven to make the food taste much better than proprietary sugar loaded flavour enhancers. Keep smiling
