Hi All,
I was wondering if anyone knows if Ezekiel bread is HFI Safe
Ingredients: Org Sprouted Wheat, Filtered Water, Org Sprouted Barley, Org Sprouted Millet, Org Malted Barley, Org Sprouted Lentils, Org Sprouted Soybeans, Org Sprouted Spelt, Fresh Yeast, Org Wheat Gluten, Sea Salt.

I also want to ask if this gluten free bread called Bread SRSLY is HFI Safe?

Bread Loaf Ingredients (non-GMO): Organic White Rice Flour, Organic Millet Flour, Organic Sorghum Flour, Arrowroot, Sourdough Starter (Water, Organic Sorghum Flour), Xanthan Gum, Salt.
Dinner Roll Ingredients (non-GMO): Organic White Rice Flour, Organic Millet Flour, Organic Sorghum Flour, Arrowroot, Sourdough Starter (Water, Organic Sorghum Flour), Xanthan Gum, Salt.

I just want to add on to my previous post on Ezekiel bread. There are so many more easily digestible sprouted grains on the market and I would like to make him some bread using them. But they are made from whole grain. So my question is does the sprouting ,also called germination, change the fructose content and make them HFI safe? I know from research by Weston A Price Foundation, that the process of germination changes the composition of the grain. It increases vitamins and releases vitamin C and neutralizes phytic acid, a substance present in the bran that inhibits absorbtion of calcium, magnesium, iron, copper and zinc. Complex sugars are broken down during sprouting and portion of the starch in grain is transformed into sugar. I have searched online and have no answers. My son has eaten the ezekiel bread a few times this week and seems ok. It's a good quality bread that would support his issues with gluten sensitivities. But because he is speech delayed, and I can't ask him how he feels. I am just observing for changes. He keeps asking for this bread but I don't want to give it to him again until I find out if it's on the safe side. I am hoping someone on this forum has tried it or has some helpful info.

I thought I'd post an opinion, as no one else has so far. BUT, it's just my opinion, and I DO NOT have a confirmed diagnosis of HFI. However, I can tell you for sure that some of the ingredients listed in the Ezekial bread do have some fructose in them...like the lentils. The other grains will be whole grain, because they were able to be sprouted. So they, too, will have some fructose. The sprouting process itself breaks down complex starches into some sugars, and I've read, some is converted into protein the longer the grain (seed) has been sprouting.
A number of years ago, I tried the Manna bread, plain, for which there are no added sweeteners at all, not even barley malt. But, I was shocked at how very sweet the bread was, just from being sprouted. It was like cake, and I couldn't eat it. My kids, on the other hand, loved it, because they also thought it was like cake!
Because your child is not yet able to really give you verbal "feedback", it's probably better to err on the side of caution and go with something else.

Hi Annemarie, Sorry I didn't respond sooner, but I was away from the interwebs and on vacation. It looks like Ann has already responded better than I could. Whole grains do have fructose--and some grains more than others. I just got sick because I tried soy sausages.
The dinner rolls that you listed, however, might be a safer option than the bread, but I'm not very familiar with the ingredients and their fructose content.

Thank you for your replies on the sprouted bread. Mark has an aversion to anything sweet and this bread doesn't taste sweet. He seems to like but I agree on being cautious about it. I wish I could test it out but since I don't have HFI, I can't. So we will try a different bread.
