Kristen, I was told in the beginning that potatoes would depend on how old the potato was. As the potato is stored, the older it gets, the worse it is. A new, fresh potato is fine.
I have never seen this in Regina. She has no problem with any potatoes. But I would say that it's certainly a possibility.
And without saying, I'm assuming you checked, and rechecked the hot dogs, too. I only mention this because one time we had a problem. I searched high and low before I finally found that they changed the recipe in the same brand of hot dogs I always bought. (Probably made at a different plant).
And it's also possible that something was mis-labeled. A product change in the same day, with the labels not changing at the exact same time.
So I'd maybe wait a bit and try a bite of a different kind of potato. But if it seems to be a pattern, I think I'd avoid them. A lot of maybes. Maybe the carbs? Maybe a co-incidence? But again, certainly a possibility.

The only potato listed as OK on my diet list is white potatoes. Not sure how much that means, since it seems that everyone's diet lists vary widely. Nate doesn't like potatoes, maybe one bite if he's in the mood, so I can't tell you whether he does well with them or not. The idea of the old versus new is interesting though.
