Does anyone know if we can use coconut flour? And what about glucose tablets that are flavored? The only glucose tablets that I can find are flavored... Which I can't imagine is without sucrose. But I asked a pharmacist, who called the company, and their representative couldn't tell me. Does anyone know if these are safe?

If the glucose tablets are flavored, my guess is that they use a "natural flavor" or a "fruit essence" which always means it's got something in it that will make you sick. I use Smarties (US Dextrose Candies) because they're cheaper, have the same effect, and are just as contaminated as glucose tablets.
Let me know if you do manage to find any unflavored glucose tablets. I'm sure those would be the safest option!
EDIT! Whoops! Forgot to respond about Coconut Flour.
Coconuts are not safe. I'm not sure if there's a way to extract the unsafe parts of coconut from the safe parts--corn somehow does this as Corn Meal is safe (and Corn Syrup Solids may or may not be safe) while corn in a can, high fructose corn syrup, corn syrup and corn on the cob is not safe.
I would guess that coconut flour is not safe, but I've never tried it.

Most Glucose is not safe.. legally glucose can have up to 40% "other sugars" in it and still be sold as 100% pure.
If you really must have a sweetener then Dextrose or Lactose sugars are as safe as any you will find.
PLEASE remember Sorbitol can be LETHAL to us and is in most IV meds!

I find coconut flour too sweet personally, plus it made me nauseous when I tried it. But, I like the almond flour with a wee bit of dextrose. Not bad for treats. Both are tricky to bake with and take extra moisture -- so be sure to get a tried and true recipe, Don't just substitute or you will be disappointed.
