Photo0764 by Charliemeg, on Flickr These are really quick and easy to make, you can make a bigger batch and leave in the fridge for a day then just roll out what you need and bake just before serving for really fresh ones. You can either just make plain cheese ones or just bacon or combine the two for even tastier. 4oz / 100g / 1 cup butter 4oz / 100g / 1 cup plain (all purpose flour) 4oz / 100g / 1 cup grated cheddar cheese Pinch of salt 3 rashers untreated bacon (so HFI safe) Pinch of chilli powder or cayenne pepper if can tolerate. Cream the butter with a wooden spoon or electric whisk. Stir in the flour, cheese salt and seasoning if using. If using bacon fry the slices lightly then very finely chopping before adding to the mixtrue. Mix to a soft dough. form into a ball and wrap in greaseproof (wax) paper and chill in fridge for at least an hour. Preheat oven to 350F/ 180C/ Gas4. Roll out into a thin sheet on a floured board and cut to whatever shape or size you want. Small shapes make better bite size treats. Place on greased baking sheet and bake for 10 to 15 minutes until golden. Transfer to wire rack to cool. You could top these with cream cheese to serve if you wanted.
