Lucky ~ Buttermilk Belgian Waffles
Belgian waffle grids are deeper and hold more batter than a traditional grid. Although this recipe can be used with either, the Belgian Waffle Baker is far superior...
* Do not sift flour when measuring *
* Makes 8 large waffles *
INGREDIENTS...
* GREEN = HFI safe
* ORANGE = may depend on sensitivity or amount consumed
* RED = caution (-investigate / make informed decision-)
3 cups ..... Flour ... (All Purpose, white enriched)
3 tsp. ...... Baking Powder
1 tsp. ...... Baking Soda
1 tsp. ...... Salt ... (-Iodized fine sea salt-)
3 cups ..... Buttermilk
3/4 cup .... Butter (salted), melted .. (-I use 1/2 cup-)
4 ............ Eggs (large), beaten lightly with wisk or fork
HOME-MADE BUTTERMILK
Our son is not lactose intolerant (via breath test) but seems to do better on lactose-free milk.
To make 11/2 cups of Buttermilk:
1. Measure 11/2 Tbsp (tablespoons) of white vinegar.
2. Pour into glass measuring cup.
3. Add milk (or lactose-free milk) and fill to the 11/2 cups line.
4. You want the vinegar and milk to equal 11/2 cups TOTAL.
**Repeat steps 1-4 as 3 cups total are needed for full recipe**
* Both lactose-free and regular milk work equally well.
* Let stand for 10 min. Use in recipe.
Actual buttermilk calculation = 1 Tbsp white vinegar for every 1 cup milk TOTAL.
BUTTERMILK BELGIAN WAFFLE : Assembly...
1. In a large bowl, whisk together flour, baking powder, baking soda and salt.
2. In a medium bowl, combine buttermilk, butter and eggs.
3. Mix wet ingredients into dry. Stir thoroughly by hand with large wisk (not electric). Batter will be thick.
4. Pour about 3/4 cup of batter into middle of Belgian waffle iron. (Traditional iron : 2/3 cup)
5. Close lid and cook for 6-7 min until golden brown. Top as desired.
* Enjoy...
NOTE :
* This recipe can easily be cut in half to make 4 waffles *
* Caution, some regular household salt contains sugar (salt should always be "iodized" to protect thyroid).
* Iodized Fine Sea Salt is HFI safe.
* Our son (10yrs old) is fine with eggs. But some report reactions if too many consumed -or- highly sensitive.
* He loves these waffles topped with melted butter and served with sugar free bacon.
* Another topping option may be homemade sugar free whipped cream.
* Waffles can be kept warm in oven at low heat, or re-heated for a few moments in the waffle iron itself.
* If there is extra batter, store (covered) in fridge for one more day. This ensures fresh crispy waffles later.
* I bought two waffle makers to speed up the cooking process as we are a family of five.
* Easy way to measure butter *
* Although I no longer use Crisco vegetable shortening, the tucked in tab on the box is fantastic for measuring butter. It's like a ruler.
* If you buy butter that is in the shape of a rectangle box or "brick", you will notice the size resembles the Crisco box.
* Just cut the tab off the Crisco box and use as a ruler for cutting off different increments of butter.
* I've been using mine for years. No more messy scooping and guessing.
Here are some ruler measurements in the interim.
1 cup ....... = 6 cm.
2/3 cup .... = 4 cm.
1/2 cup .... = 3 cm.
1/3 cup .... = 2 cm.
1/4 cup .... = 1.5 cm.
1/8 cup .... = 0.75 cm.

** This is an excellent Belgian waffle maker (and the most economical -$26.00-). I bought two when they went further on sale at Walmart. Although the maker looks blue, the outside top is white in color.
