I am wondering if pectin would be safe? Isn't it derived from fruit?

Pectin is a thickener.. I am not sure what it's residual Fructose content might be but there are a lot of options that might be a better choice. Potato flour or Potato starch (its the same stuff) seems to be safe for me.. it has the added advantage in that it is almost instant as a thickener and needs no "cooking in" like cornflour and even if it contains a little Fructose it is so good that a teaspoon full will thicken quite a lot of fluid
