Wondering if anyone here can safely eat real lacto-fermented sauerkraut or its juice (the one naturally fermented without vinegar or any other ingredients added, just cabbage and salt)? I can't find it on any HFI or FM lists online. Thanks!

Interesting you mention this. Another source of vitamin C. I get cravings for kraut too. Usually in winter. Again.. is my body telling me what it needs? Vitamin C ? I think so. Kraut was a source of C for inlanders or people who did not have access to citrus.
I buy kraut but make sure no sugars are added. I tend to rinse it in water with a strainer. I will eat plain without warming because it was already cooked when it was canned. Plus the vinegar would reduce botulism. Or I might cook it with hot dogs or sausage. But then you have to watch for additives and hidden sugars in the hot dogs. Susan

I am fine with kraut. There are some sweetened varieties, so avoid those, but the brands that taste like pickles illicit no reaction out of me.
I put kraut on Hebrew National Hot Dogs. Delicious.

I can eat a plain raw sauerkraut made by Alexander Valley Gourmet. They are a local company located only 20 mins from my home.

The only cabbage I can tolerate is the green parts of the leaves, (no stalks not veins in the leaves) white cabbage is a definite no for me and that is the same for all sauerkraut I have tried. I used to eat pickled red cabbage but find now this is too sweet for me too now.

I've found german sauerkraut in my grocery that did have added fructose to the kraut. It tastes VERY sweet and includes a sweetener on the label (tastes like sweet pickles). I often wonder what recipes they are using when they breakdown the fructose on some of these sites.
