I'm still adjusting to the HFI diet and feel as if I only have 3 or 4 menu items to choose from for dinner. I try and cook only one dinner that everyone can eat. Tonight was tacos, tomorrow is smoked sausage and fried potatoes, Tuesday is.... who knows! Thanks for any suggestions that you may have. Graham also has celiac disease, so wheat is out although I do have some newly acquired white rice pasta, and a cow dairy intolerance. We do use some goat milk products in moderation. Thanks! Erica

My dinners are usually pretty pathetic. Chicken & Rice Tuna Noodle Casserole (with or without tuna, depending on my mood) White Pasta Tuna Melts Grilled Cheese Chicken Nuggets & French Fries Then I get even more pathetic and just make rice with butter or pasta with butter. When I feel adventurous, I make taco salad.

Some other dinner items we have:
-omlettes (with spinach and mushrooms inside) and grits -a grilled meat of some sort (chicken breast, steak, hamburger, fish) with a safe veggie side and then plain rice -pasta with sausage or shrimp and a safe alfredo sauce -grilled sandwiches (usually roast beef or cheese) -Mexican food - typically chicken quesadillas, nachos, or safe tamales from Trader Joe's with a side of black beans -meatloaf with a side of mashed potatoes

Here are some of my dinners: Homemade meatballs with pasta. Homemade grounded meat-sauce with pasta (fry grounded meat, add mushrooms, maybe some leeks if you can tolerate it, add some flour, pour on water, some bouillon, maybe cream). Pasta carbonara (done right there's no onions in it, just pasta, meat, egg yolk and parmesan). Grilled salmon (in oven or in the frying-pan) with boiled potatoes or homemade mash. A dollop of sour cream with squeezed lemon and salt as a cold sauce. Yellowtail catfish boiled (or coated with eggs and bread-crumbs and fried) with rice or potatoes. Same sauce as with the salmon. Maybe half an avocado as well. Grilled chicken with rice and homemade sauce (made with lots of cream and the juices from the bird). Pork-chops coated with eggs and bread-crumbs, fried and served with rice and a homemade sauce. Any type of meat, seasoned, fried and served with rice (or potatoes) and homemade sauce. Pancakes or waffles with whipped cream or grinded cheese.
I take normal receipts and take away anything I can't eat. About half of the times it still makes a normal meal (just a bit plainer than an average person might like it).

Oh wow, can you come cook for me? My mouth is watering!!! Thank you! I've actually never been good at cooking. But I like food, and my ex was a marvel in the kitchen, so I've picked up a little bit. Add to that the fact that I'm a mother (still feels weird saying it, and she's turning 4 soon!) and thus have to set a good example variety-wise. I just have to find different, interesting, somewhat nourishing courses to set on the table. So, I'm not calling myself very good yet, but I'm starting to know my way around the kitchen (if I have to). I'll add some other ideas later if I remember some more.

Thank you, thank you, thank you for the ideas!!!! I saw the post regarding waffles. We use a homemade syrup made from mapleine, dextrose, and glucose syrup. Have other's had problems with the mapleine artificial flavoring? Erica

I also love love love waffles! I got one of those commercial grade Belgian waffle irons a year ago, and we use it at least once a week. Do you all use Jiffy mix? That's my favorite. I found a safe buttermilk mix the other day from Trader Joe's that I haven't tried yet.
Erica, I can't help you on the maple flavoring. I just put butter on mine. Sometimes I pre-melt the butter and pour it on. Yummmmy! Okay, not the healthiest, but oh well.

I use Jiffy Mix &/or Bisquick Mix. Both taste about the same. I just used maple flavoring with my ice cream I made the other day. I didn't have any trouble with it. I also don't user any sweetener for my waffles. They fine just with butter. One thing to remember, Erica, usually (there are a couple exceptions here) HFI people don't like sweets. I've tried sweetening a few things with Dextrose, but I still think they're too sweet. This is odd because I like the dextrose by itself. I also use pixie stix in my yogurt, but my brain keeps sending up warnings that it's too sweet. On that note, you can always try both the syrup waffles and the butter waffles to see which ones Graham will like best.

I rarely use any kinds of mixes, not for waffles, not for soup, not for sauces. The ones I have tried, you probably wouldn't know since I live in Sweden. Normally, I just whip flour, milk and eggs and a pinch of salt together to make pancakes or waffles. Sometimes a little bit of baking soda as well for the waffles. I only have butter, or grinded cheese or whipped cream on mine. When I'm feeling daring and have had a very strict diet the last couple of days I might take one or two strawberries or blueberries, mash them and use as "jam" for several pancakes. That's about my limit. I wouldn't do it if I've cheated earlier in the day or the day before. I also detest sweet taste (for the most part).
