Hi guys, Has anyone used cinnamon in drinks etc. I have just started using it as I saw on the Boston University site that cinnamon, garlic and onion spices are OK to use.
Does anyone else have any recipes to use with this magic ingredient.
My daughter just loves a hot cinnamon drink instead of the hot chocolate we have been making her. Let me know if you also have found this most wonderful flavour and what you do with it.
what a break through for us.

I never thought of making hot cinnamon instead of hot chocolate! What a nice idea! I do like "egg nog" spices: cinnamon, nutmeg, clove.

Chocolate for an HFI is really nasty stuff. I use cinnamon bark (its the a tree bark) that I buy in large bags from Indian / Pakistani shops here in the UK. I use it in rice and curry's mostly I am not happy using the ready ground stuff because it tastes sweet to me however the straight bark variety is much nicer and seems to have a lot less sugar in it. I cook my rice in a microwave.. its dead easy and done in 11 min! put rice in a microwaveable bowl cover with boiling water to a depth of about 3/4" 15mm above the rice slam it in the microwave and put it on Hight setting for 11 min. job done! I frequently put Cinnamon bark (also known as Dalcini), Cardamoms (also known as Elachi), Cloves, Fennel seeds and Celery seed (very small amount as its VERY strong flavoured) This makes authentic Pilau rice.. and is perfect to go with curry.. only watch out for the hole spices they can be quite strong flavoured if you bite one.. or hard in the case of the Cinnamon bark..

I should get the cinnamon bark. I always feel like the powdered cinnamon has some additives to it that aren't quite safe.
I can't handle chocolate or cacao either. But they don't contain fructose, so I don't quite understand why they are problematic? Is it the fiber breaking down into fructose?

OK, now I feel like the Princess and the Pea! I tried a little cinnamon on my French toast the last two days, and I had a fructose reaction! So I looked up cinnamon, and sure enough, it does have quite a bit of fructose per 100g serving. But I'm just having a sprinkling! Sheesh. Crazy. Oh well, so much for cinnamon. :-(

I do not feel good when I eat cinnamon. I have never tried the whole bark. I do not feel good after eating cacao either.
