Just in time for Christmas. I stumbled onto this link www.elise.com/recipes/archives/000037moms_roast_turkey.php while looking for a decent way to cook a turkey for Thanksgiving. I had to modify the ingredients list slightly to make it HFI-safe: * 1 turkey, approx. 15 lbs.* * Juice of a lemon * Salt and pepper * Olive oil or melted butter (you don't really eat anything below this line, it's just for flavor.) * 1/2 yellow onion, peeled and quartered 2-3 cloves of garlic, chopped a little bit * Tops and bottoms of a bunch of celery * 2 carrots (just eliminating this one altogether) * Parsley (You might want to substitute a different herb--I was fine with Parsley as I didn't eat it, but Parsley is not HFI-safe.) * Sprigs of fresh rosemary, thyme Follow the directions in the link for how to prepare the turkey. You don't need a lid or to cover the turkey at all--which my mom was amazed at. I didn't tie up the turkey, either, and it seemed to be fine--but that might have been because it was smaller.

Do you have trouble with eating parsley? I have never seen it listed as being something to avoid. Regina eats parsley without a problem. My old lists all said the herbs were ok, but then we all know how wonderful the lists are............... Just curious.

I haven't had a problem with parsley, but then I'm not going out of my way to add it in everything and eat it by the spoonful, so I'm not sure. I think I remembered Fred saying it was a no-no.

Vit K clots the blood. The same with Broccoli, etc. We are doing very well with the coumadin. We are always right where we should be at the monthly blood test. That's one thing about HFI. Her diet is so regular that it helps with the clotting problem.
A cup of parsley is a LOT. Regina mostly eats it on cooked potatoes. We add dried parsley to melted butter and pour it over the tators.
