Here are a few ideas for you. Also, even though he doesn't have back teeth, he should be able to gum a lot of things. I used to give my daughter a hunk of bread, like a baguette, and she would gum it until it is nice and slimy and went down just fine. You can also puree most anything (rice, chicken, broccoli, etc) if you have one of those food bullets or similar.
Small bits of fish Mashed potatoes (big whites or russets with skins removed) Rice cereal or oatmeal Cheese (Sometimes I'd take those American slices and give my kids bits of them. They are nice and soft and gum well.) Plain yogurt Safe bread, as I mentioned above Cottage cheese Penne pasta with just butter (my daughter loved these because she could hold them and also gum them) Pickle spears Black olives Plain rice (make it soft and somewhat mushy at first) Goldfish crackers (I know the pretzel version are safe. The cheese may also be okay. You may want to wait on these until he's swallowing and gumming well)
"On-the-go" food is definitely harder. I think you'll be surprised how quickly he ramps up to "real" food, and that will make life much easier. Bread is always handy if you can find a safe source. Cheese sticks, goldfish crackers, and pretzel sticks will be your life saver. Eventually triscuits - those are harder to swallow. My daughter (who isn't HFI) actually really likes spoon sized shredded wheat. I lived on that stuff growing up. She started eating those around 18 months.
Good luck. I'll try to think of more things.
