I am a Coeliac, also Fructose Malabsorption, don't go near Preservatives and additives. A nightmare.
I was diagnosed after years of wondering what was wrong, in 2010. I had the camera top and bottom, asked hwat I was to do tomake sure my system worked and I went to the loo. The so called expert recommended that I drink something from the chemist which had surprise wheat in it!!!
So since then it has been a learning curve. We moved back home from Australia, and went to a new doctor who had never heard of Fructose malabsorption. So yes, I have had to try and teach him.
So what do I do?
Meat and fish, yes. Im not keen on fish but have had to make sure I try and eat all that is available so I can eat. Salmon, Haddock, plaice. I make a cream sauce with Oatly cream, Its brilliant. Pour it on, and add maybe a little tomato sauce of herbs a sprinkling of salt, make up your own sauce. But it is brilliant, no having to make a white sauce, this Oatly cream is the best thing since sliced bread.
Oat for breakfast, and blueberries. Yes they have half Fructose and half Glucose, so safe as they are equal and your system can cope with berries, also raspberries and strawberries. Steer clear of Blackberries!!!
I add Oatly cream on top, yummy, you don't need sugar at all.
All herbal teas are wonderful, hot or cold. Turmeric wonderful for a tummy that's suffering from sorness. Also Ginger teas, or add ginger to your food. It really is a good one to help stop that soreness.
Small amounts of veggies, I get away with some white cabbage and red cabbage and the broccoli, the long ones!! Anything else if you try, keep it small amounts, and don't have the same thing everyday, as in a way you are over loading.
Gravy. Well another problem, BUT TESCOS make their own Yeast, just like Bovril, which is a no no, has additives etc in it. But the Tescos one, brilliant. I add a teaspoon of Arrowroot, it make it thicker, and if meat juices add that as well.
Now this is interesting too. White sugar is balanced, again in fructose and glucose. So I make the odd cake, but half the amount suggested. You get used to it in the end. But it is a little sweet and wont send you over the edge. Or try and make a cake with no sugar and have a savoury cake. Being also lactose intolerant, I do get the lactose free milk and cheese, but not in abundance, still a little wary!!! Oatly also do a milk, so its worth trying, DONT use Soya, its a killer to the system. Look at anything in packets and its in there. A long with Corn. Now this is definitely a tummy sore maker, its in everything. Even on stamps and the back of envelopes. It appears in all forms, I suggest you look it up and see all the different names it comes under, its so dangerous to us with tummy probs!!!
I use something called a Remorska. It can be bought from Lakeland. A pot with a lid which is the cooker. I put in my meat and let it cook, then add slices of potatoes (don't know what I would do without potatoes) then when that's cooked add my veggies. It keeps all the goodness inside the pot and doesn't evaporate. But the best thing, its the only thing to wash up!!
Potatoes are wonderful. They can come in all varieties, from boiled and smashed, and mashed, and chipped, and sliced and diced, it makes you feel that you are eating something different in different shapes.
My little treat once a week is a Twirl. Its the only bit of chocolate I can eat, as there are no additive, or wheat or any nasties. But yes, only once a week. If you like chocolate, make a lightly sweetened cake with cocoa. Wonderful There is even lactose free mascarpone out there not, mix in a teaspoon of white sugar and add cocoa.
There is so much more I could add, but it really is a learning curve. We are all so different in what we can tolerate or not.
You have to sometimes try, and then suffer. Otherwise Good luck, be imaginative. So sorry you suffer like me. I have traced the gene in my family tree. It goes back to my great gran in the 1800's who died with stomach cancer. My dad suffered, then me, then my daughter is Coeliac, but found out quicker than me, and not in such a bad state, but my grand son has Ulcerative colitis. One day it will be solved when they can help us before we are born!!!
